Beer and sturgeon: a perfect match

We have always combined beer with fish, forever obtaining a satisfying result. And since there are so many varieties of beer, we can always provide a different touch to our preparation. Come and try this easy recipe of sturgeon in beer, created by the great chef Juan García from the Restaurant Sarita Colonia.

Ingredients
  • 3 pieces of Oscietra Sturgeon (or 1 entire fillet)
  • Beer
  • 1 white onion
  • 2 white potatoes
  • 2 carrots
  • ½ red bell pepper
  • ½ yellow bell pepper
  • 3 garlic cloves
  • 2 laurel leaves
  • 3 rosemary sprigs
  • Cumin
  • Ginger powder
  • Merkén
  • Salt and pepper
  • Olive oil

Preparation

  1. Dice the onion, potatoes, pepper bells and carrots.
  2. Pre-heat the oven at 220°C.
  3. Season the fish with salt and pepper. Add a bit of olive oil over the frying pan, and once it has heated, add the pieces of fish. Sear for 1 minute per side over high heat.
  4. Lower the heat and add the vegetables. Add rosemary, laurel, merkén, cumin and ginger. Let it brown for 3 minutes.
  5. Add the beer and let the alcohol evaporate.
  6. Place the frying pan inside the oven for 10 minutes. Remove from the oven and serve.

Tip: Use a frying pan you can place inside the oven, so you can cook and serve in the same place.
