Em muitas casas de caviar se podem ver classifica\u00e7\u00f5es como &#8220;Cl\u00e1ssico&#8221;, &#8220;Real&#8221; e &#8220;Imperial&#8221;, onde o fator determinante \u00e9 o tamanho dos ovos. Para medir seu di\u00e2metro, \u00e9 calculada a m\u00e9dia da medi\u00e7\u00e3o de 10 ovos selecionados aleatoriamente. Nos ovos de Oscietra encontram-se di\u00e2metros entre 2,8 a 3,3 mm, enquanto nos ovos de Beluga o di\u00e2metro \u00e9 maior, at\u00e9 4 mm.<\/li><li><strong>Homogeneidade:<\/strong> este par\u00e2metro analisa a uniformidade de tamanho e forma em todos os ovos da f\u00eamea.<\/li><li><strong>Turgor:<\/strong> um fator importante na degusta\u00e7\u00e3o do caviar \u00e9 o momento em que os ovos s\u00e3o trazidos ao paladar, onde ocorrem pequenas explos\u00f5es de sabor. O turgor analisa o qu\u00e3o \u201cfirme\u201d \u00e9 o caviar, para que essas explos\u00f5es dentro da boca sejam mais percept\u00edveis e requintadas.<\/li><li><strong>Saturnado:<\/strong> olhando atentamente os ovos se pode notar um pequeno anel (como o anel de Saturno). Quando o caviar est\u00e1 saturado, indica que foi colhido na janela ideal de tempo.<\/li><li><strong>Esfericidade:<\/strong> este par\u00e2metro mede o qu\u00e3o redondo ou oval \u00e9 o caviar.
